Here's an idea I picked up from an old This Old Schoolhouse magazine.

My 3rd grader chose the Titanic -

4th grader did Narnia -

 

And my 6th grader did Island of the Blue Dolphins -

 

We'll keep trying to include a creative literature project each month as an alternitive to traditional book reports!
